Ingredients for 4 people:
Ingredients pizza dough:
- 500 g flour & some flour to work with
- 1 cube fresh yeast
- Approx. 250 ml water
- 50 ml milk
- 5 tbsp olive oil
- salt & sugar
Ingredients Topping:
- 20 spears green asparagus
- 2 pieces of scamorza (smoked mozzarella) 250 g each
- 20 pieces of small vine tomatoes
- 1 bunch basil
- 200 g crème fraîche
- Olive oil & ground pepper
- Freshly grated parmesan
- 20 slices of Parma ham
Preparation:
Place flour in a bowl and press a well into the flour. Dissolve the yeast with 50 ml of lukewarm milk and pour into the well. Dust with a little flour and let rise in a warm place.
Peel the green asparagus (only the lower half) and cut into thin slices. Leave the tips (about 5 cm) whole. Blanch the asparagus tips briefly in boiling salted water and then refrigerate directly.
Finely grate the smoked mozzarella. Wash the small vine tomatoes and remove the stalk.
Knead the pizza dough on the floured surface and divide it into 4 equal pieces. Roll out the dough pieces into thin patties and place them on baking sheets with baking paper or a silicone mat. Then brush the bases with crème fraîche. Now sprinkle the pizza with the grated mozzarella and spread the asparagus slices on top. Finally, drape the asparagus tips and the small tomatoes alternately on the pizza in a star shape.
Bake the asparagus pizza in a preheated oven at 180°C for about 10 minutes (the baking time may vary depending on the oven).
Quickly top the finished asparagus pizza with Parma ham and basil. Then drizzle with a little olive oil and season with ground pepper.
If desired, sprinkle some grated Parmesan over the pizza.
The pizza should be served immediately.
