Smoked mozzarella with summer salad
Ingredients for 4 people:
- 20 pieces yellow cherry tomatoes
- 12 pieces of red cherry tomatoes
- 400 g washed and cleaned strawberries
- 100 g arugula
- 50 g basil
- 2 pieces of scamorza (smoked mozzarella) about 250 g each
- Balsamic vinegar (preferably 10 years old)
- Fruity olive oil
- Sea salt and black pepper from the mill
Preparation:
Cut each 12 red and yellow cherry tomatoes in half and place in a bowl.
Halve the remaining 8 yellow cherry tomatoes and 8 strawberries of relatively equal size and set aside. Cut the remaining strawberries into chunks.
Set aside 4 nice large basil leaves for garnish and roughly chop the rest.
Mix the red and yellow halved cherry tomatoes with the strawberry pieces, the roughly chopped basil and the arugula.
Dress the whole with salt, pepper, balsamic vinegar and olive oil and season to taste.
Cut the smoked mozzarella into 3mm thick slices using a slicer. (Alternatively, cut with a knife into slices as thin as possible).
Dress the halved strawberries and yellow cherry tomatoes also with salt, pepper, balsamic vinegar and olive oil and season to taste.
Dressing:
Arrange the mozzarella slices in a circle on the 4 plates and place the dressed salad in the center of each. Garnish each plate with 4 halved strawberries and yellow cherry tomatoes and the basil.
Serve with ciabatta.
